I found another cheese lover at the hostel! Kealie and I are on on a roll with our weekly cheese parties. The featured cheese of the week was this slice of semi-soft washed rind from Irish Holsteins, paired with quince paste.
Below is a scotch egg! It's a hard boiled egg wrapped in meat then baked and topped with mango chutney. Ian officially thinks I'm gross.
Got to talk to some cheesemakers and farmers at the market! The sheep cheese is great. I tried a bunch of incredible lemon curd and bought the lemon posset. Such a treat!
We baked the camembert with garlic and topped with brown sugar and raisins for another cheese party win.

Double Jersey cream. Pure milk fat is the best.
Roasted potatoes, parsnips and carrots at Aileen's house (Dan Flaherty's cousin). She served us a very Scottish meal and we had such a lovely evening together.
Our Burn's night meal - Haggis, neeps and tatties! Robert Burn's is Scotland's national poet. We ate this traditional meal, washed it down with a bit of scotch and recited his poem, Ode to Haggis.
Haggis is minced sheep offal with oats and suet. It's like creamy meatloaf and tastes pretty great. Neeps are turnips and tatties are potatoes. The haggis was topped with an onion whisky sauce.

Fish and chips are everywhere. This was some seriously good fried Haddock from the best fish and chips shop in Lerwick, Shetland called Fort Cafe.
